Cherry Apple Cobbler Oatmeal Recipe

I don’t know about you guys, but this time of year just about the only thing that will get me out of bed on these chilly winter mornings is the thought of something yummy to eat.  What’s even better, is when it only takes minutes to make and warms me up!  Oatmeal is such a great way to start the day…it’s a favorite in our house (it’s one of the few things my hubby can cook! ;)) and the kids love that it basically like eating a sundae for breakfast because of the millions of different things you can top it with and it always turns out to be delicious.  Walking through Target last week they had this end cap full of Quaker® Oats and fun topping ideas that was calling my name.

I grabbed a box of Quaker® Oats and a few other ingredients and headed home to create something delicious.  I picked up some dried fruits and nuts and instantly I thought of cobbler.  A warm, sweet cherry apple cobbler.  Yum.  Here’s what you’ll need for this yummy breakfast…

Cherry Apple Cobbler Oatmeal

Ingredients

  • 1 3/4 cups water
  • 1 cup Quaker® Oats
  • 1/4 cup chopped dried cherries
  • 1/4 cup chopped dried apples
  • 1/2 tsp of cinnamon
  • 1 tbs of butter
  • 1/3 cup of packed light brown sugar
  • for the crumb topping:
  • 1 cup of Quaker® Oats
  • 6 tbs of flour
  • 1/2 cup of packed light brown sugar
  • 8 tbs butter, softened
  • 1/4 tsp ground cinnamon
  • 1/3 cup of chopped pecans

Instructions

  1. Bring 1 3/4 cups water to a boil and add in 1 cup of your Quaker® Oats . Simmer over medium heat for about a minute until the water is absorbed by the oats. Mix in chopped dried cherries, chopped dried apples, 1/2 tsp of cinnamon, 1 tbs of butter and a 1/3 cup of brown sugar while the oatmeal is still very hot.
  2. For the Crumb Topping:
  3. Mix together all of the dry ingredients, then mix in butter using your fingers. The mixture will be crumbly in texture. Spread the mixture on a greased cookie sheet and bake at 350 degrees for about 15 minutes. The mixture will spread and become thin and crispy. Take it out of the oven and let it cool completely.
  4. Once it cools, you can break it into pieces.

Now, you could stop here, and let me tell you, you would not be disappointed.  It is yummy!

But, what fun is cobbler without the crumb topping?  I whipped up a sweet and crunchy topping for this oatmeal that takes it to the next level.  The great part is, you can make this ahead of time and store it in an air tight container for a week, so you can eat it every morning.  Here’s what you’ll need:

1 cup of Quaker® Oats

6 tbs of flour

1/2 cup of packed light brown sugar

8 tbs butter, softened

1/4 tsp ground cinnamon

1/8 tsp nutmeg

1/3 cup of chopped pecans

Mix together all of the dry ingredients, then mix in butter using your fingers.  The mixture will be crumbly in texture.  Spread the mixture on a greased cookie sheet and bake at 350 degrees for about 15 minutes. The mixture will spread and become thin and crispy.  Take it out of the oven and let it cool completely.

Once it cools, you can break it into pieces.
