Coconut Pineapple Pancakes Recipe with Coconut Syrup

I have a favorite breakfast spot in Waikiki…the Hula Grill…do you know it?  Not only is the view to die for, but their coconut pineapple pancakes is my absolute favorite!  And the coconut syrup? Well, I could practically drink it.   We love to visit Hawaii in September after school is back in session and the summer crowds have dissipated.  The weather is still beautiful, and if you are lucky enough to catch the change of seasons, you will see some of the biggest surf of your life on the North Shore.  It is as if the waves practically know when fall starts.  The swells become huge!   Since it’s September, I have had a hankering for my favorite pancakes lately, and without a trip to Hawaii in sight, I decided to whip up my own version.  Here is this yummy, and easy recipe…

Use our favorite pancake recipe with just a few minor changes and you will have coconut pineapple pancakes…you will need a can of pineapple tidbits, a 1/4 cup of coconut milk and some shredded coconut.  Drain the pineapple and reserve the juice.  Add 1/4 cup of the pineapple juice to the pancake recipe.  Instead of 3/4 cup of buttermilk, use 1/2 cup of buttermilk and 1/4 cup of coconut milk.  Mix 1/2 cup of shredded coconut into your batter.  Pour your pancake batter onto your pan and then add pineapple tidbits to your liking and sprinkle the top of the pancake with a little more shredded coconut.  Cook like a regular pancake.

Coconut Syrup Recipe

This delicious syrup will take you to the Hawaiian islands. Pair it with our coconut pineapple pancakes for maximum Aloha!

Prep Time 5 minutes
Active Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup coconut milk
  • 1 tablespoon coconut extract
  • 1 tablespoon corn syrup

Instructions

Bring butter, sugar, coconut milk, coconut extract, and corn syrup to a simmer in a large saucepan over medium-high heat. Serve warm.
