There are two kinds of people… those that love beets and those that don’t. I am the latter. But I decided one day to come up with a recipe that I would like… and guess what? I not only love beets made this way… I absolutely love them.. as in I cannot stop eating them! So for all you beet lovers and haters.. you must give this Roasted Beets with Goat Cheese recipe a try! This dish goes with practically any meal… so don’t delay!
Roasted Beets with Goat Cheese
3 fresh beets, peeled and cut into 12 small wedges each
2 tsp. ground cumin
½ tsp. crushed garlic
1 ½ -2 Tbsp. olive oil
2 Tbsp. lemon juice
¼ c. green onions, chopped
2 Tbsp. cilantro, chopped
¼ tsp. salt
pepper to taste
2 Tbsp. goat cheese, crumbled
Balsamic Glaze
Preheat oven to 400 F. In a medium bowl, stir the beets with the olive oil, cumin, crushed garlic, salt and pepper. Place the beets (single layer) on a baking sheet. Roast for 35 minutes. Transfer the beets to a mixing bowl and toss with the lemon juice. Mix in the green onions and cilantro. Place the beets in a serving bowl or platter and top with the crumbled goat cheese. Drizzle with the balsamic glaze. Serve. Serves 6
