Spinach and Citrus Salad Recipe

This delicious spinach and citrus salad recipe was passed along to our family by my dear friend Mandi more than a decade ago!  It has been a hit in our family ever since.  So much so, that it was served at my brother’s wedding!  It’s perfect for any time of year since the ingredients are always easy to find.  Th dressing is an an easy mix of just a few ingredients you probably already have on hand and can be made in minutes.

Ingredients:

Baby Spinach
Mandarin Oranges
Dried Cranberries
Sunflower Seeds
Green Apples (sliced thin)

Dressing: (mix this up about an hour ahead and chill before serving)
1/2 Cup Oil
1/4 Cup Sugar (or honey)
1 TBS Yellow Mustard
2 TBS Apple Cider Vinegar
1 TBS Minced Onion (dried or fresh)

  2. This is such a simple salad, which I love because it drives me crazy having to spend a bunch of time prepping vegetables just to throw it all into a salad. This would be a great dinner to whip up on a busy weeknight! Thanks for sharing!
