While I am vacationing in Hawaii, I thought it would be perfect to share a recipe I was inspired to make from Hawaii! Oh my… breakfast like this one is absolute perfection! The banana macadamia pancakes with coconut syrup combo can’t be beat in my book. I hope you enjoy this as much as me and my family does…. Aloha my friends! (Cue the Hawaiian music!)
Banana Macadamia Nut Pancakes
1 ½ c. all purpose flour
2 T. granulated sugar
1 ½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 large eggs
2 c. buttermilk
1 ½ tsp. vanilla extract
2 ripe bananas- mashed
½ c. roasted macadamia nuts, chopped small
In a large mixing bowl, combine all the dry ingredients and mix well. Add the eggs, buttermilk, vanilla extract, mashed bananas and nuts. Mix until just combined.
Heat a griddle over medium heat. Drop a ladleful of batter onto the griddle. When the top of the pancake is full of bubbles, gently turn it over. Heat until the other side is golden. Keep warm until ready to serve.
Serves 4-6

These look amazing! Do you happen to have a good recipe for coconut syrup? We used to bring it back by the gallons everytime we’d go to Hawaii. (I’d go to the restaurant supply place 🙂 with the airline $25 a bag increase I don’t think I’ll be doing that again anytime soon!
