Super Easy & Yummy Game Day Chili Cheese Dip Recipe

I don’t know about you, but in our house we think the best part of January and February are all the fun football games. With college playoff games stretching into late January and NFL games running through mid February, there are lots of excuses to make all of your favorite dip recipes and curl up on the couch for some great games! A homemade chili cheese dip is always a crowd favorite on game day. I have been making this easy chili cheese dip every year for the Super Bowl because it’s one of our family’s favorite recipes. This cheesy dip is made with just four simple ingredients and is the perfect appetizer for a cold winter day. Easy appetizer recipes like this crowd pleaser are a great way to keep an energetic crowd of guests fed while also being able to enjoy the game and festivities yourself. Whip up this recipe in a matter of minutes.

WHAT YOU NEED FOR THIS CHEESY CHILI DIP RECIPE

  • Shredded Cheese – I like to use a sharp cheddar cheese, but regular medium cheddar is great too. If you are willing to take a few extra minutes and shred your own cheese rather than buying pre-shredded it will melt better, but pre-shredded works fine too if you are trying to save time. I have made this with a shredded Mexican blend cheese many times.
  • Canned Chili – I like to use a chili with beans, but if you prefer a chili con carne that is all meat, that would work fine too. Whatever type of chili you prefer will be great. A vegetarian chili would make this an easy vegetarian dip.
  • Cream cheese – I usually use a reduced-fat cream cheese or neufchatel cheese to make myself feel a little better. 😉
  • Salsa – a chunky salsa whatever spice level you prefer. I usually use a medium salsa like Pace.

HOW TO MAKE THIS EASY CHEESY CHILI DIP

Combine your grated cheese, softened cream cheese, can of chili and salsa in a saucepan over medium-low heat on the stove top.

Stir until all the ingredients are combined and the cheese melts into smooth and cheesy, irresistible dip.

You can serve this dip in a bowl or, if you prefer for it to stay warm, a small chaffing dish or slow cooker works well too! When the dip gets to room temperature it can get a little thick, so keeping it warm in a small crock pot is a great way to serve it.

You will definitely want to pick up some hearty corn chips…I love Fritos Scoops with recipe, but tortilla chips of any kind that are strong enough to load up with this cheesy goodness with be great with this dip. Tostitos scoops are great too!

If you want to make it look pretty for serving you can top it with some chopped green onions or a little chopped cilantro…greenery always makes everything look so fresh and pretty. A little dollop of salsa is great too.

If you need to store any leftover chili cheese dip (which I highly doubt there will be any!) just store it in an airtight container in the fridge. You can reheat it the next day in a medium saucepan over low heat or in the microwave. Just be sure not to over-cook it.

This chili cheese dip recipe would be fabulous served over hot dogs or on a baked potato. Yum!!
