I’ve been on a pineapple dessert kick lately…it must be summer. 😉 Have you ever grilled pineapple before? One of my favorite Hawaiian sandwiches (recipe coming soon!) includes grilled pineapple and I just love it. This is a super simple, somewhat healthy dessert, because at least it’s fruit and not cake, right? 🙂 Grilled pineapple, my favorite coconut gelato and caramel sauce come together for a sticky, yummy and EASY dessert.
Here’s what you’ll need:
One Pineapple (makes about 10 slices)
Caramel Sauce (love this recipe from Shana, you can just omit the salt)
Coconut Gelato (available in tubs in the freezer section at the grocery store)
Slice your pineapple, and using a grill pan heated to medium/high heat, grill your pineapple slices about 1-2 minutes on each side. Remove from the heat, place two slice of pineapple on a dish, top with a scoop of gelato and drizzle with caramel sauce and you’re all set to serve!
Yum! Don’t you just want to gobble that up this pineapple dessert right now?! And it doesn’t get much easier! This is the perfect light dessert to serve on a summer night. I hope you love it.
