After a month of decadent eating…. and our pants getting tighter and tighter… January is always a month where we have the goal to eat healthier. Can you relate? But eating healthier shouldn’t mean less flavor or deliciousness. That’s just plain torture if you ask me!
I have a great salad I want to share with you all that not only has healthy ingredients, but is so good you will actually crave it! Tangy, sweet, crunchy and savory all in one bite… yum! Every time I have served this salad I get ooohhhhs and aaahhhhs! I know it will become an absolute favorite of yours!
Kale and Apple Salad
1-10 oz. bag of Kale, chopped thin
1 large crisp apple, julienned
1 8 oz. bag of roasted almond slivers, candied
¾ -1 c. grated parmesan cheese
¼ c. fresh lemon juice
¼ c. grapeseed oil
1 tsp. granulated or coconut sugar
½ tsp. salt
In a large bowl, toss the kale and lemon vinaigrette. Add the rest of the ingredients. Toss again. Season with salt and pepper.
