I hope you all had a wonderful Easter weekend! We spent time at church, neighborhood egg hunts, visiting with friends, eating ham and potatoes, and getting fun visits from the Easter Bunny. Oh, how I love these days! It has become a tradition for us, since our dear family friends the Peo’s moved back to Southern CA from NYC, to spend Easter at their house with yummy food and a super fun backyard egg hunt. This year I brought the salad. It was super easy to make and was a hit, so I thought I would share the super easy Spinach Salad recipe here for you all to enjoy if you are looking for a salad that is pretty, delicious, and easy as can be. 🙂

I think this is just such a pretty salad. The addition of the blackberries is key I think, because the color and texture they add is wonderful!
Here is what you will need:

If you don’t have Goat Cheese on hand you can also use feta. Same things with the pecans, you can substitute walnuts if necessary. We love to use the Litehouse Organic Balsamic Vinaigrette. It has a nice little bit of a bite to it, so combined with the sweetness of the berries and candied nuts and the salty cheese it a perfect balance of flavors.
You could easily make this salad a meal too by adding some grilled chicken. It would be delicious! I love a great spinach salad recipe like this to have on hand for warm summer nights too when it is just too hot to cook. Throw these ingredients together and you have a yummy dinner in a few minutes. Now that is my kind of dinner recipe! 😉
