People…. this here salad is beyond words! I taught it in my last cooking class and everyone in the last class can’t stop telling me just how much they love it and constantly make it. It is light, refreshing and goes with everything! I served it alongside home made pasta and it was a match made in heaven. Beautiful… tasty… perfect.

Mixed Greens and Blueberry Salad with a Lemon Honey Vinaigrette
1- 6 oz. bag mixed greens
1- 10 oz. bag snap peas, cut in half on the diagonal
4 oz. package fresh blueberries
feta cheese, desired amount
candied nuts, desired amount
zest from one lemon
Lemon Honey Vinaigrette:
1 shallot, roughly chopped
¼ c plus 2 tsp. fresh lemon juice
¼ c. honey
2 Tbsp. apple cider vinegar
½ c. grapeseed oil
¼ t. salt
zest from 1 lemon
Combine all the ingredients in a blender and blend until smooth.
Assembly:
In a large mixing bowl, toss the mixed greens, snap peas and desired amount of vinaigrette. Transfer to a serving bowl or platter. Scatter blueberries, feta cheese and candied nuts on the top of the greens. Top with the lemon zest. Serve immediately.
