I am always on the lookout for quick, healthy meals that I can make with minimal effort. With crazy afternoons running kids to lessons and practices, I need something that quick and delicious. Today I’m sharing one of my all-time favorite recipes for chicken and rice. I got this recipe from a friend years ago and it is still one of my favorites today. It’s a great go to for a quick weeknight meal, and also for company. You only need 5 ingredients for this recipe…most of which you probably already have hanging out in your cupboard or fridge, and unlike most marinades, the chicken only needs to sit in it for about 20-30 minutes…so it’s fast!
Here’s what you’ll need for the marinade:
1/4 cup of Kikkoman Soy Sauce
1 TBS grated Ginger (to make this step even faster, I like to use the Christopher Ranch chopped ginger from the store in a little glass bottle)
1 TBS Sesame Oil
2 Green Onions thinly sliced
1/4 tsp crushed red pepper
Mix all of the ingredients together and pour over your chicken. I use boneless, skinless chicken things (about 1.5 pounds) with this recipe. It’s always easy to double or triple if you need more. 🙂
After the chicken is marinating, I start the rice in my rice cooker. That way it’s done about the same time as my chicken. And with the warming feature on the rice cooker, you know it will always be ready as soon as you are! 🙂
Once the chicken has marinated for 20-30 minutes, I just pop it on the grill. If you don’t feel like heating up the grill, you can always use a grill pan on the stove too. Once it’s cooked through, you are ready to eat! 🙂
