A few months ago when we had the chance to stay at the Monarch Beach Resort, our stay came with daily breakfast. Yum! Well, little did I know that the complimentary breakfast would include one of the yummiest avocado toast with egg recipes I have EVER had. It was absolutely delicious. I have been dreaming about this avocado toast ever since our stay, so this weekend I decided to see if I couldn’t re-create this amazing avocado toast with egg recipe and I’m happy to report that I came pretty darn close…and so now I can share it with you!! Get ready to let your taste buds celebrate, because this will be your new favorite breakfast. It is packed FULL of flavor.
Here is what you will need to make this delicious avocado toast with egg recipe: (serves 4)
-2 Large Ripe Avocados
– 5oz of goat cheese
-2 Vine Ripened Tomatoes
-1 Heirloom Tomato
-2 baguettes
-2 Tbs Milk or Heavy Cream
-Onion Powder
-Salt
-Pepper
-1 clove of garlic
-8 eggs (2 per person)
Directions:
Mash 2 avocados and mix with salt, pepper and onion powder to taste
In a separate bowl, using a mixer, whip goat cheese and milk or cream until light and fluffy. You may need to add more milk/cream, but start with the 2 tbs and add more as needed to get a nice, spreadable consistency.
Slice tomatoes.
Slice baguettes into 2 inch pieces. You will most likely just use the 4-6 best slices from the middle of the baguette because they are the largest. Use the remaining baguette for a cheese plate for lunch! 😉
Butter each slice of baguette on top and place them on a cookie sheet in the oven at 350 degrees for a few minutes until butter is melted and bread is lightly toasted.
While the bread is in the oven, smash your garlic clove to open it up and add it to a pat of butter on a pan to cook your eggs. Cooking the garlic in the melted butter gives the eggs a great extra little bit of flavor. Once the butter has melted, fry up your eggs in the butter.
The goat cheese on this avocado toast is the real secret. It blends in with the avocado SO well, and gives the whole dish a creamy, tangy flavor. So good! Even if you aren’t a huge fan of goat cheese, I would encourage you to try your piece of toast with a little bit of the goat cheese spread and just see what you think. Because of all of the other ingredients, it’s not an overwhelmingly powerful flavor in the recipe.
To assemble, spread one piece of toast with goat cheese spread, top with mashed avocado, tomato slices and finally a fried egg. Salt and serve hot. This recipe allows for two pieces of toast per person.
Since we are in the middle of winter, the produce here in Utah leaves a little to be desired…so my options for heirloom tomatoes were few and far between. I found a perfectly ripe vine ripened tomato (my favorite to purchase at the grocery store if I don’t have a farmer’s market handy) and some yellow cherry type tomatoes, so I went with those. The tomato options during the summer will be even better for this gorgeous, delicious avocado toast!
Two pieces of this toast is a VERY hearty breakfast, so depending on appetites, this recipe might serve more than four.
If you are able to get those eggs perfectly cooked, you’ll get that gorgeous yolk that adds to the color and flavor of this yummy avocado toast. It is seriously making me hungry again just looking at these pictures!
