Do you always want to create a fun, themed breakfast for your kids at the holidays, but feel like you never have the time?  Well, here is the answer to all of your problems! 😉  You can whip up these delicious pumpkin pancakes in no time and top them with cute (and SUPER easy) whipped cream ghosts.  Your kids will think you’re the most fun mom ever and it won’t take up your whole day.

Here’s what you’ll need for the pancakes:

Halloween Breakfast: My Favorite Pumpkin Pancake Recipe with Whipped Cream Ghosts

Easy pumpkin pancakes recipe with whipped cream ghosts
Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • 1 1/2 cups milk
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tablespoons melted butter
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt

Instructions

  1. In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot

For the whipped cream:

Beat one pint of heavy whipping cream with 3 tablespoons of powdered sugar until very stiff.  Once cream is very stiff, place in a quart or gallon sized Ziploc bag and twist at the top like a piping bag.  Snip one corner of the bag off with a pair of scissors and pipe ghosts on top of your pancakes.  Place two mini chocolate chips on each ghost for eyes.  Tip: Do not pipe ghosts on pancakes straight off of the grill.  Let them cool off for a few minutes so the cream does not immediately melt.
