Best Soft & Chewy Scotcharoo Bar Recipe Ever

I don’t know where I’ve been for the last 40+ years, but I can honestly say I’m not sure I have ever had scotcharoo bars in my life until this last year. I know…you’re in total disbelief. One of my favorite soda shops in Utah also sells treats…one of which is a scotcharoo bar. I decided to give one of these amazing cereal bars a try a few months ago and, hello! I am hooked! I have always loved rice krispie treats, so it’s no surprise that I love these chewy scotcharoos, but the creamy peanut butter, butterscotch chips and chocolate chips make these delicious bars next level!

This easy dessert has now become a family favorite. I feed so many college students these days, I love that with just a few minutes and a few simple ingredients I can whip these up for an instant party treat.

CLASSIC SCOTCHAROO RECIPE INGREDIENTS

  • Crisp Rice Cereal

  • Creamy Peanut butter – we love Skippy, but I’m sure these would be yummy with any peanut butter…including crunchy!

  • Granulated sugar

  • light corn syrup

  • Milk chocolate chips – I’ve made these with dark chocolate and semisweet chocolate chips before as well…so anything works!

  • butterscotch chips

HOW TO MAKE SCOTCHAROOS

This amazing no bake treat is sure to become a favorite recipe in your house!

Before you Start: Just like rice krispie treats, these peanut butter bars can get sticky! Prep a 9×13 pan by spraying with cooking spray. You can also line the pan with parchment paper if you prefer.

In a large bowl, add your crisp rice cereal.

In a large pot, combine sugar, peanut butter, and light corn syrup to a boil over medium heat, stirring constantly. Remove the sugar mixture from the heat as soon as it starts to boil and the sugar dissolves.

Pour the hot peanut butter mixture over the crispy rice cereal in your large mixing bowl and mix well. Pour the cereal mixture into your prepped greased 9×13 pan and gently press down with a spatula. You can spray your spatula with cooking spray too, to help it from sticking to the cereal mixture.

Melt your chocolate chips and butterscotch chips together over medium-low heat in a small sauce pan, stirring constantly. Pour the melted chocolate and butterscotch mixture over your pressed cereal base and let it set.

You need to allow time for the chocolate to harden before cutting and serving. If you’re anything like us, we can’t eat them fast enough, so we often pop them in the fridge or freezer to help them set up faster.

Best Soft & Chewy Scotcharoo Bar Recipe Ever

These sweet, peanutty, chocolaty, chewy dessert bar are the perfect way to serve a crowd in minutes.

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 ½ cups Skippy peanut butter
  • 1 cup light corn syrup
  • 1 cup white sugar
  • 1 tablespoon unsalted butter
  • 6 cups crispy rice cereal
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips

Instructions

    Grease a 9x13-inch baking pan; set aside.

    Mix your peanut butter, the corn syrup, and sugar together in a large pot; cook over medium/low heat until all ingredients are well combined and melted together. Remove the pot from the heat. Add a tablespoon of unsalted butter to the mixture and stir until melted.

    Stir in rice cereal until well combined.

    Transfer the cereal mixture into your greased pan and pat it down with buttered hands or a rubber spatula.

    Melt the chocolate chips and butterscotch chips together in a medium saucepan or double boiler over medium-low heat; stir until smooth.

    Using a spatula or knife smooth chocolate over the top of the cereal mixture.

    Cool completely before cutting them into small squares. If you want to speed up the time for the chocolate to harden, you can put them in the fridge, just make sure to let them come back to room temperature before you try to cut through them.

 SCOTCHAROO BAR TIPS

If you decide to use the fridge or freezer method to speed up the process, just allow the scotcheroo bars to come to room temperature before serving. They are much easier to cut into small squares when they are at room temperature too.

If you’re feeling fancy, you can make these crispy treats look pretty too by adding a butterscotch swirl on top. After you melt the chocolate chips and butterscotch chips together, melt more butterscotch chips in a separate pan. Spread the chocolate and butterscotch mixture on top of your cereal bars, then drip some of the plain melted butterscotch over the top of the chocolate and use a toothpick or knife to drag the melted butterscotch through the chocolate to create a pretty swirl design on top.

HOW TO STORE SCOTCHAROO BARS

Store these delicious bars in an airtight container for 3-4 days. There’s no way they’ll last that long though! 😉
